PANCAKE RECIPE

There are reports that pancakes appeared more than 9 thousand years ago in France, called pancake in English, because it is a type of pancake cake, and also because of its ingredients that are common in traditional cake recipes, which are eggs, flour and milk.

In reality, the true origin of this delicacy is not known for sure, but we do know that it is enjoyed in many countries in both its sweet and savory versions.
Above all, what makes it even more attractive is its infinite variety of fillings, which allows it to please all palates.
Whenever I need to prepare a different and quick meal, I immediately think of a pancake recipe, because I'm sure everyone will like it.

INGREDIENTS – DOUGH
- 2 cups of milk
- 2 cups of wheat flour
- 3 whole eggs
- 1 pinch of salt
INGREDIENTS – FILLING
- ½ ground beef
- 1 medium onion, diced
- 2 cloves of garlic, diced
- 2 tablespoons of oil
- Olives
- Salt to taste
- Dried seasonings (Oregano, chimichurri and black pepper)
- 2 sachets of tomato sauce
- 200g grated mozzarella
PREPARATION METHOD – DOUGH
- Add all the dough ingredients to a blender and blend for 3 minutes.
- If necessary, turn off the blender and use a spoon to stir so that the flour comes away from the blender cup. Then blend again.
- Your dough is ready, now let's cook it
- In a non-stick frying pan, add a dash of oil and let it heat up.
- Add a portion of dough, you can use a ladle size, remember that your dough needs to fill the bottom of your frying pan.
- After adding the batter, move the pan in circular motions so that the batter spreads throughout the pan.
- Let the dough brown on one side and come away from the pan, then turn it over and brown on the other side.
- This process is very quick, as the dough cooks easily and has a consistency that is easy to handle.
- Do this same process with all the pancakes and set them aside.
PREPARATION METHOD – FILLING
- In a pan add the oil and fry the onion and garlic until golden.
- Then add the ground beef to the pan and let it fry. Stir until it is well combined. Add the olives and stir.
- Then add the salt and dry seasonings of your choice.
- In a separate pan, heat 2 sachets of tomato sauce and season to taste.
ASSEMBLY OF PANCAKES
- Place the filling in the center of the pancake dough and roll it up.
- Then place the rolled pancakes side by side in a baking dish or baking tray.
- After finishing this process, pour the sauce over the pancakes.
- finally sprinkle the grated mozzarella.
- Bake in a preheated oven at 180 degrees for 15 minutes until the cheese melts.
- Serve with white rice.
Filling Tips: Chicken with cream cheese, ham and cheese, sardines, bacon with broccoli, among others.
