First of all, I want to let you know that this pumpkin kibbeh recipe is always a huge success.

Easy to prepare, this pumpkin kibbeh is delicious and nutritious.

I recommend it to everyone who loves good food, those who want a healthy and functional diet and of course those who love kibbeh and pumpkin.

This kibbeh can be filled according to your preference.

INGREDIENTS

  • 1/2 large kabocha pumpkin
  • 2 onions
  • 2 heads of garlic
  • 1 and 1/2 cups of hot water
  • 1 cup of kibbeh wheat
  • 1/2 squeezed lemon
  • 2 tablespoons olive oil
  • 200 g Mozzarella
  • 200 g of cottage cheese
  • Salt
  • Pepper
  • Chopped mint to taste

 

PREPARATION METHOD

1- First, hydrate the wheat for kibbeh with hot water and set aside.
2- Cut the pumpkin into slices and the onion into four parts.
3- Place on a baking tray along with the two heads of garlic.
4- Season the pumpkin, garlic and onions with salt, pepper and olive oil.
5- Bake in a preheated oven at 200°C for 30 minutes or until the pumpkin is soft.
6- Remove the baking tray from the oven. Remove the pumpkin pulp and cut the onions into small cubes.

7- Add the pumpkin, chopped onion and squeeze the garlic heads.

8- Knead everything very well.
9- At this point, drain the kibbeh and remove the excess water.

10- Add the wheat for kibbeh to the pumpkin, garlic and onion mixture, along with the mint, lemon juice, salt and pepper.

11- Now, let's assemble our kibbeh, in a pan place half of the kibbeh mixture.

12- Fill with cream cheese and mozzarella cheese.

(If you want to add another filling of your choice, feel free).

13- Cover with the remaining kibbeh mixture.
14- Finally, place in the oven preheated to 180°C for 20 minutes.
