Chia Pudding

INGREDIENTS: 

  • 1 cup raw, unsalted almonds
  • 1 cup white raisins
  • 1 cup Chia Seeds
  • 1 teaspoon of ground cinnamon
  • Vanilla Bean or 1 teaspoon Vanilla Extract
  • 3 cups of water
  • Fruit of your choice

 

PREPARATION METHOD: Pudim de Chia

  1. First, place the almonds and white raisins to hydrate in mineral water.
  2. Each one in a container.
  3. Let them soak for approximately 4 hours.
  4. After this period, discard the almond water and reserve the grape water.
  5. Blend the almonds and raisins in a blender with the water they were soaking in.
  6. Add the cinnamon, vanilla, 3 cups of mineral water and beat until creamy and smooth.
  7. Strain this mixture through a cheesecloth strainer.
  8. Add the chia seeds to this mixture and let them soak for at least 30 minutes in the refrigerator, until they reach the consistency of a pudding.
  9. When it has the desired consistency, distribute this chia pudding into individual containers, glasses, cups or jars of your choice.
  10. To make this pudding even more delicious, add mousse made from your favorite fruit, or even the chopped fruit itself, on top.
  11. After choosing your preferred fruit, refrigerate it for approximately 1 hour.

Shelf life: up to 3 days in the refrigerator.

Fruit Tip: Strawberries, Banana, Mango, Blueberry, Pineapple.

You can add nuts, chestnuts, and even cocoa powder to your chia pudding.
