Pumpkin Muffin

INGREDIENTS:
- 4 Eggs
- 180 g cooked kabocha squash
- 2 tablespoons powdered culinary sweetener
- 1 cup Coconut Flour
- 4 tablespoons baking powder
- 2 tablespoons extra virgin coconut oil
- ½ cup dark chocolate chips (optional)
PREPARATION METHOD:
- First, start by greasing the molds where you will bake the dough.
- Then, after separating all the ingredients to prepare the muffin, in a blender add the eggs, cooked pumpkin, sweetener, coconut flour and coconut oil.
- Beat all ingredients well.
- Then add the yeast and use the pulse function.
- Immediately after rising, place the dough in the molds and bake in a medium oven for approximately 25 minutes.
- After baking, while still hot, add the dark chocolate chips to the muffins.
If you decide to prepare the recipe in a blender, mash the pumpkin with a fork before blending the ingredients.
