Zucchini Lasagna
Do you like lasagna, but are on a diet and are avoiding pasta and high-calorie foods? How about a zucchini lasagna to enhance your healthy menu.

INGREDIENTS – Sauce
- ½ kg ground beef
- 2 tomatoes, diced
- 1 onion, diced
- 3 cloves of garlic, chopped into small cubes
- Olives to taste
- 2 sachets of tomato sauce
- Dry seasonings to taste (Chimichurri, oregano, black pepper, among others)
- Parsley and chives to taste
- Salt to taste
- 4 tablespoons of olive oil
INGREDIENTS – Lasagna
- 4 zucchini, sliced
- 500 g mozzarella
- 1 bag of grated parmesan cheese
PREPARATION METHOD – Sauce
- First of all, chop all the ingredients to make preparation easier and faster.
- Now, in a pan, add the olive oil, wait for it to heat up a little and fry the onion and then the garlic.
- Then add the ground meat and let it fry well until it is well cooked.
- Then add salt to taste, olives, tomatoes and dried spices and sauté well.
- Once it is well sautéed, add the tomato sauce sachets and mix.
- At this point, add the chives and parsley.
- Our Bolognese sauce is ready.
PREPARATION METHOD – Zucchini Lasagna
* Preheat your oven to 200 degrees for 15 minutes *
- First, season the zucchini slices with salt and pepper.
- It's time to assemble the lasagna. In a baking dish, place a layer of Bolognese sauce.
- Then add a layer of sliced zucchini and the sauce again.
- Then, a layer of mozzarella.
- The next layer will be zucchini, then the sauce and mozzarella again.
- This process will be repeated until you reach the height of your shape.
- The last layer has to be zucchini, sauce and mozzarella.
- After that, sprinkle grated cheese on top.
- With the oven preheated, bake your lasagna for approximately 25 to 30 minutes.
- After removing from the oven, it is ready to serve.
Note: This lasagna can be eaten cold, made with just the pre-cooked zucchini and sauce, or made with it raw and cooked in the oven.
Tips: You can add hearts of palm, corn, peas and any other ingredient of your choice to the sauce. If you prefer, you can swap the ground beef for chicken.
