INGREDIENTS:
- 10 g dry yeast
- 240 ml warm milk
- 2 eggs
- 45 g sugar (¼ cup)
- 60 ml of oil
- 1 tablespoon of salt approximately
- 4 cups unbleached wheat flour
FILLING:
- 850 g ground beef
- 1 large onion, chopped
- 3 cloves of minced garlic
- Oregano to taste.
- 2 tomatoes, diced and seeded
- 1 pinch of paprika and 1 pinch of black pepper
- Chopped pitted olives
- salt to taste
PREPARATION METHOD:
- First of all, separate all the ingredients and then start the recipe.
- Now, in a bowl, add the dry biological yeast, warm milk, salt and sugar and mix well with the help of a spoon or spatula.
- Then add the oil and mix again.
- Now, add the wheat flour little by little and stir.
- When the dough starts to firm up, knead it for a few minutes.
- Then, sprinkle wheat flour on a work surface and knead the dough well.
- This meat esfirra roll dough is very fluffy and very tasty.
- After you finish kneading the dough, let it rest for 20 minutes after kneading.
- While our dough rests, we will prepare the filling and ground meat.
How to prepare the filling:
- First, in a pan fry the onion and garlic with a little olive oil,
- Add the ground beef and stir well until the meat is fried.
- Add the seasonings, salt, oregano, black pepper, paprika and whatever else you like.
- Add the chopped tomatoes and olives and let them sauté for a few minutes.
- Now that the filling is finished, it's time to get back to the dough.
Finally, with our dough and filling ready, we will open the dough and fill our meat esfihas.
- Roll out your dough using a rolling pin.
- At this point, divide the dough in half and open the first part, to make it easier, and then repeat the process with the rest.
- After opening part of the dough, look for a pot or lid that has a round shape to help you cut the circles.
- Right after cutting all the circles, it's time to fill our esfihas.
- Then, place a heaping spoonful of ground meat in the middle of the cut out circle of dough and close it into a triangle shape.
- This way, when everything is stuffed, place it on a baking tray with the folded side facing down.
- Finally, brush egg white on top and bake until the dough is golden on top.
- After baking, the snack can be frozen in special bags and heated whenever you want to eat it.
