Pumpkin Cream

INGREDIENTS
- 1 kg of pumpkin cut into cubes without skin
- 2 Beef Stock Cubes – Optional
- 1 cup of cottage cheese
- 1 chopped onion
- 4 cloves of garlic
- 1 Cup of Bacon, diced
- Grated Parmesan or Mozzarella cheese
- Dry Seasonings (Oregano, Chimichurri, Black Pepper)
- ½ cup chopped chives and parsley
- Salt to taste
Follow-up – Toast or bread – Optional
PREPARATION METHOD
- First, remove the skin from the pumpkin and cut it into cubes, cook it in a pressure cooker with water for approximately 10 to 15 minutes.
- Immediately after cooking the pumpkins, drain them, but do not discard all the cooking water.
- Use some of the hot cooking water and dissolve the beef broth. Use approximately one cup of water.
- Now, blend the cooked pumpkin in a blender together with the dissolved meat broth until it forms a pumpkin cream, if necessary add a little of the cooking water to help blend and set aside.
- Then, in another pan, fry the bacon, onion and garlic.
- When everything is well fried, pour the pumpkin cream into the pan and stir well.
- Keep the heat low to avoid burning and stir constantly.
- Then add the suggested dry seasonings or those of your preference.
- Taste and check the salt.
- Add the cream cheese and mix well, in no time our pumpkin cream will be very creamy and even tastier.
- Add the chives and parsley.
- Finally sprinkle some grated parmesan or mozzarella cheese.
- Serve hot and accompanied by toast or bread of your choice,
- after all, a broth always calls for a side dish like this.
Suggestion: If you prefer, add shredded chicken to your recipe. This will increase the protein content and also give it a special touch.
