Cornbread
For those who love a good bakery cornbread, this recipe is for you.
This cornbread is delicious and melts in your mouth.
Those who love cornbread know that the perfect combination for cornbread is that freshly brewed coffee.
This recipe requires few ingredients, is simple and is ready very quickly.
INGREDIENTS:
- 1 cup of cornmeal
- 1 cup of wheat flour
- 1 cup of sugar
- 1 pinch of salt
- 1 teaspoon baking powder
- 1 egg
- 2 tablespoons butter or margarine
- 200 ml of whole milk (until it reaches the right consistency)

PREPARATION METHOD:
- First, take a bowl and mix the dry ingredients.
- Add the fine cornmeal, wheat flour (unleavened flour), sugar, a pinch of salt and a spoonful of yeast.
- Mix all the dry ingredients well, using a spatula.
- Then add the whole egg, the 2 tablespoons of butter/margarine at room temperature to make mixing easier.
- Mix well until the butter and egg are well incorporated into the dough, and everything is well mixed.
- At this point, mix the dough with your hands.
- At this point the dough will have a crumbly texture, the milk will help bind the dough together.
- Then, add the milk little by little and keep stirring your dough. Don't add all the milk so you don't run the risk of it falling apart.
- When the dough is very smooth and does not stick to the bowl or your hands, this is the point at which the cornbread dough is ready.
- This dough is at a very pleasant point to work with, as it is very soft.
- If you like fennel, this is the time to add some of it, but it is completely optional. (1 teaspoon)
- Grease a baking tray with margarine and cornmeal, so that your cornbread doesn't stick.
- Time to roll the dough, take small portions of dough and make balls, don't make them too big, because the dough will rise a little and spread in the pan.
- If possible, make them all the same size to make it look nicer.
- Leave space between each one on the baking sheet, so that the cornbread does not stick to each other.
- Finally, bake in a preheated oven at 180º for 30 minutes.
- Wait for the cornbread to become golden brown and have a cracked texture.
- Finally, make that coffee and serve your cornbread.
Tip: If you wish, add chocolate chips or pieces of guava paste to the cornbread before putting it in the oven.
Store in a tightly closed jar to maintain the crunchy texture.
