This Christmas rice is a classic for Christmas dinner and New Year's Eve dinner.

INGREDIENTS:

  • 1 chopped onion
  • 3 cloves of minced garlic
  • 2 grated carrots
  • 1 seedless tomato, cut into cubes
  • ½ dark raisin
  • 1 can of sweet corn
  • 2 cups of rice
  • 2 cups of green beans cut into small slices
  • ½ Yellow Pepper
  • ½ Red Bell Pepper
  • Chopped olives
  • Dry Seasonings: Oregano, Chimichurri, Pepper
  • 1 cup of hearts of palm – Optional
  • Salt to taste
  • Oil or olive oil to taste
  • Green smell to taste

PREPARATION METHOD:

  1. In a pan, add the olive oil and fry the onion, peppers and garlic. After frying, add the rice, green beans and grated carrots. Add salt to taste.
  2. Also add the dry seasonings and water to start cooking.
  3. Cook your rice as you normally would, just don't let it get too soft.
  4. When the rice is ready, let it cool a little.
  5. Then, place it in a bowl and add the chopped olives, raisins, corn, chopped tomato without seeds, and sliced hearts of palm.
  6. Mix well, add salt and check if it is good.
  7. Sprinkle the green smell on top.
  8. It is ready to serve.
  9. If you don't like any of the ingredients, you can replace or remove it.
