INGREDIENTS:
- 2 cooked and shredded chicken breasts
- 2 grated carrots
- 1 onion, diced
- 1 can of peas
- 1 can of corn
- 200 g raisins
- 1 apple, diced
- 1 chopped red pepper
- 500 g Mayonnaise
- 1 bunch of chopped celery
- Chopped olives to taste
- Green smell
- Dry seasonings: Oregano, Chimichurri and Pepper or another of your preference.
- Straw potatoes to taste
PREPARATION METHOD:
- First, start cooking the chicken breast in the pressure cooker. Add salt to the water.
- After cooking, shred and season your chicken well.
- While you wait for the chicken to cook, cut all the other ingredients for our chicken salad.
- Once everything is chopped, we will start preparing our salpicão.
- In a bowl, add the chicken breast, chopped onion, grated carrots, peas and corn, olives, bell pepper, apple, raisins and celery and mix well.
- At this point, add the dry seasonings, the chives and check if the salt is good.
- Mix in some straw potatoes
- Transfer the mayonnaise salad to a baking dish.
- Refrigerate.
- When serving, sprinkle more straw potatoes on top.
- Chicken salpicão is served cold.
