Low Carb Chicken Pie
How about preparing a low carb chicken pie today?
This pie is very practical and quick to prepare.
You can vary the fillings of the pie according to your taste and the ingredients you have at home.
This low carb chicken pie can also have a vegetarian 100% filling.
Remove the shredded chicken and add more vegetables of your choice, such as peas, grated carrots, among others.
INGREDIENTS:
Mass:
- 2 cups of whole milk
- 4 whole eggs
- 1 cup of parmesan cheese
- 1 teaspoon baking powder
- 2 cups coconut or almond flour
- Salt to taste.
Filling:
- 500 g cooked and shredded chicken breast
- Seasonings of your choice (Paprika, Oregano, Garlic powder, Chimichurri)
- 1 Onion, diced
- 1 Tomato, diced
- Olive oil to taste
- 1 can of corn
- Palm heart
- Broccoli
- Chopped olives
Preparation method:
- The dough for this pie is very quick to prepare, so let's start preparing the filling.
- In a pan, add a drizzle of olive oil and fry the onion.
- After that, add the cooked and shredded chicken.
- Along with the chicken, add the seasonings, salt to taste, paprika, oregano, garlic powder and chimuchurri, mix well.
- Then add the chopped tomatoes, corn, hearts of palm, broccoli and chopped olives.
- If you want a very creamy pie, at this point add 2 tablespoons of cream cheese to the filling.
- Set aside your chicken filling.
- Preheat your oven to 200 degrees for 20 minutes.
- At this point, we move on to preparing the dough.
- This dough is so easy to make that it will be ready in the blink of an eye.
- At this point, place the 2 cups of milk, coconut flour, eggs, grated parmesan cheese, a pinch of salt in a blender and blend well for approximately 2 minutes.
- Then add the baking powder and pulse 2 to 3 times with your blender.
- There you go, the dough is ready.
- In a greased baking dish, add a little of the dough until it lines the bottom of the pan.
- Then the filling, distribute your filling well.
- Finally, fill with the remaining dough.
- If you wish, sprinkle a little cheese on top to make your low carb chicken pie gratin.
- At this point, bake for approximately 30 minutes at 180º.
- Remembering that the time will depend on the power of your oven.
This pie can be eaten for breakfast, as an afternoon snack, or even as a main meal accompanied by a salad.
